Moroccan Bean Stew Recipe



So today I decided to make this stew because, first and foremost, I had the ingredients, and second, I was inspired by the fresh tumeric root I purchased at my local grocery store. Actually I tweaked the recipe a bit, used squash instead of white potato, and omitted the beans, yet it was equally delicious. I have used the recipe a bunch of times as is, and it is always a hit.

I am not sure where my friend got the recipe from, but I am really glad she shared it with me, and I shall do the same. Enjoy!

Here are a few healthy bits:

Tumeric - a natural liver detoxifier, has antiseptic and antibacterial properties, and is useful in disinfecting cuts and burns

Cinnamon - helps to boost brain activity, and control blood sugar levels

Coconut Milk - contains potassium and calcium, and the saturated fat is made up of short-chain and medium-chain fatty acids that the body quickly turns into energy instead of storing as fat. Therefore, although high in saturated fat, coconut can aid in weight loss.
